Sesame goma

Toasted, ground or pressed into oil, sesame gives Japanese cooking its warm, nutty aroma.

What it is

Sesame seeds, white or black, are almost always used toasted: whole, ground into a paste or pressed for their oil. Toasting brings out their aroma.

How to use it

Whole on rice and in salads, ground in creamy dressings; toasted sesame oil is used cold or at the end of cooking, a few drops at a time.
