Miso

Soybean paste fermented with koji and salt. The longer it matures, the deeper its colour and flavour.

What it is

Miso is a soybean paste fermented with salt and koji, often with rice or barley. Its colour and flavour change with the ingredients and the length of fermentation: shiro miso, white miso, is the most delicate.

How to use it

For miso soup, dissolve it in a little hot stock, off the heat. It is also used in marinades, glazes and dressings.
