- about 650 g brittle
Ingredients
- 200 g glucose syrup
- 250 g sugar
- 100 g UMAMI Organic toasted white sesame
- 100 g UMAMI Organic toasted black sesame
- 12 g cocoa butter
- A kitchen thermometer, baking paper and a rolling pin
Method
- 01
Lay a sheet of baking paper on a work surface and keep the rolling pin to hand.
- 02
In a heavy-based saucepan, bring the glucose and sugar to 120 °C, stirring only at the start.
- 03
Remove from the heat, add both sesames and the cocoa butter and stir until everything is well combined.
- 04
Pour onto the baking paper, cover with a second sheet and immediately roll out into a thin layer.
- 05
Break or cut the brittle while it is still warm: once cold it would break unevenly.
